CRAN-APPLE WALNUT CAKE 
1 3/4 c. light brown sugar
1/2 c. vegetable oil
2 c. flour (or 1 c. whole wheat pastry flour & 1 c. white flour)
1 tsp. baking soda
1 tsp. cinnamon
1/2 tsp. nutmeg
1 tsp. salt
2 eggs
1 tsp. vanilla
2 c. diced, shredded apples
1/2 c. chopped walnuts
1/2 lb. fresh whole cranberries

Preheat oven to 350 degrees; grease 9"x13" cake pan. Cream together oil and sugar. Add eggs and vanilla. Sift together flour, soda, spices and salt (optional). Add and stir just until mixed. Fold in apples, nuts and cranberries. Bake for 40 to 45 minutes until center springs back when lightly touched.
