BAKED POTATO SKINS | |
4 baked potatoes 4 tbsp. melted butter 1/2 cup shredded cheddar cheese 1/2 cup bacon bits 1/2 cup sour cream Cut baked potatoes into quarters lengthwise; scoop out pulp, leaving 1/4-inch shell. Brush shells with melted butter. Bake shells at 350°F for 10 minutes. Sprinkle with cheese and bacon bits. Bake just until cheese is melted, 1 to 2 minutes. Serve with a dollop of sour cream and a garnish of more bacon bits. Makes 4 servings as a side dish or 16 hors d'oeuvres Submitted by: Shirley James |
