ZUCCHINI CAKES | |
3 c. shredded unpeeled zucchini 1/2 c. shredded cheddar cheese 3 tbsp. snipped parsley 1 1/4 tsp. basil or oregano may be added if desired 1 lg. clove garlic, chopped or 1/2 tsp. garlic powder 1 c. Bisquick Heat vegetable oil (to cover bottom of 10-inch skillet) to 375 degrees if you are using electric pan. If not, have oil hot enough to fry cakes. Mix zucchini, cheese, and other ingredients except Bisquick, then stir in Bisquick in small amounts. Drop by rounded tablespoons into hot oil and fry until golden brown; drain. Makes about 2 dozen cakes. |
