PEPPERONI AND BROCCOLI SALAD 
1 (.75 oz.) pkg. Italian salad dressing mix
1 lb. bunch broccoli
1/2 lb. fresh mushrooms, sliced
1 c. (4 oz.) diced Swiss cheese
1 (3 1/2 oz.) pkg. sliced pepperoni
1 green pepper, chopped

Prepare dressing mix according to package directions; set aside. Trim off large leaves of broccoli. Wash broccoli, break off flowerets; reserve stalks for use in other recipes

Combine broccoli and next 4 ingredients in a large bowl. Pour dressing over salad; toss gently. Cover and refrigerate 8 hours or overnight. Serves 6-8.
