CARROT CAKE | |
1 1/2 c. sugar or turbinado sugar 1 1/4 c. canola oil 4 eggs 2 c. organic unbleached flour 2 tsp. baking soda 1 tsp. salt 3 tsp. cinnamon 1/2 tsp. nutmeg 2 tsp. vanilla 3 c. grated carrots Combine sugar, oil and eggs. Add dry ingredients, mixing well, then the vanilla and carrots. Pour into a greased and floured tube pan and bake 325 degrees 45- 55 minutes or until a toothpick comes out clean. |
