CATHY'S RAW APPLE CAKE 
1 1/2 c. plain flour
1 1/2 c. whole wheat flour
1 tsp. salt
1 tsp. baking soda
1 tsp. cinnamon
1 tsp. nutmeg
3 c. diced raw apple
1/2 c. raisins (optional)
3/4 c. canola oil
3/4 c. unsweetened applesauce
2/3 c. sugar
3 eggs (may substitute 2 egg whites for each egg)
1 tsp. vanilla

Cream oil and sugar. Add applesauce to creamed mixture. Sift together flours, salt, soda and spices. Add moist ingredients and eggs alternately to dry mixture. Blend thoroughly. Add vanilla.

Stir in apples and raisins. Pour into a tube cake pan which has been lightly oiled and floured. Bake at 350 degrees between 1 hour and 1 hour 20 minutes.
