VIDALIA ONION CASSEROLE 
4 med. Vidalia onions, sliced
12 saltine crackers, crushed
1 stick butter
1 can cream of mushroom soup, undiluted
2 eggs
3/4 c. milk
Salt & pepper to taste
Grated sharp cheddar cheese

Melt butter. Add onions and cook until tender. Butter casserole dish, line with cracker crumbs. Add onions and soup in layers until dish is full. Beat eggs, add milk, salt and pepper. Pour over top of casserole. Sprinkle grated cheddar cheese and a few more cracker crumbs on top of this. Bake at 350 degrees for 20 to 25 minutes or until browned and bubbly.
