VIDALIA ONION CASSEROLE 
4 med. Vidalia onions, sliced
12 Ritz crackers, crushed
1 stick butter
1 can cream of mushroom soup, undiluted
2 eggs
Salt & pepper to taste
1/2-1 c. milk
Grated sharp Cheddar cheese

Melt butter and cook onions until tender. Butter a casserole dish and line with cracker crumbs. Add onions and soup. Beat eggs and milk together and season with salt and pepper. Pour over casserole. Sprinkle with cheese and a few more cracker crumbs. Bake at 350 degrees until bubbly and brown (30-35 minutes).
