BAKED MACARONI AND SAUSAGE 
1 lb. Italian sweet sausage
1 green pepper, chopped (can be left out)
1 onion, chopped
1 (28 oz.) can crushed tomatoes
1 (8 oz.) can tomato sauce
2 c. water
1 (6 oz.) can tomato paste
1 lb. macaroni noodles
1 lb. Mozzarella cheese, shredded

Remove sausage from casing and crumble. Brown. Add pepper and onion and saute for 5 minutes. DO NOT DRAIN! Stir in tomatoes, water and tomato paste. Simmer, stirring occasionally 10 minutes (use a nine inch frying pan or larger). Remove from heat.

Cook noodles according to directions, drain. Twist noodles work best. Pour 1/2 the can of tomato sauce in a 9 x 13 x 2 inch baking pan then layer noodles and cheese. Pour the sauce over the top, then the rest of the tomato sauce. Sprinkle with Parmesan cheese. Bake in preheated oven (400 degrees) for 25-30 minutes or until bubbly and brown.

This could be made ahead of time. Refrigerate until ready to cook (will have to cook longer though). You could also make this with hot Italian sausage or hamburger.
