3 sweet potatoes
3 tbsp. flour
1 egg
3 tbsp. bacon fat or cooking oil
Salt
Paprika

Scrub, pare and cut potatoes into slices. Cook in boiling salted water until partially cooked. Roll in flour, then dip in slightly beaten egg. Fry until light brown in color. Season with salt and paprika.
