CARROTS COSMO 
1 1/4 lb. fresh carrots
1/4 c. butter, melted
1/4 c. brandy or pineapple juice
1 tsp. sugar
1 tsp. salt

Scrape carrots; remove ends. Cut carrots into strips, 2 1/2 x 1/4 inch. Put in ungreased baking dish, 8 x 8 x 2 inches. Stir together butter, brandy or pineapple juice, sugar and salt. Pour over carrots and bake 40 minutes or until carrots are tender. Oven setting at 375 degrees.
