LEMON RICE 
1 1/2 tsp. reduced calorie butter
3 tbsp. minced green onions
1/3 c. uncooked regular rice
2/3 c. water
1/2 tsp. lemon juice
Dash of white pepper
1 tbsp. minced fresh parsley

Melt butter in a small saucepan; add onions and saute 5 minutes or until tender. Add rice; cook 1 minute, stirring constantly. Add water, lemon juice, and pepper; bring to a boil over high heat. Reduce heat to low; cover and simmer 20 minutes or until liquid is absorbed. Stir in parsley.
