LEMON RICE PILAF 
1 c. diced celery
1 c. chopped green onions
2 tbsp. butter
3 c. cooked rice
1 tbsp. grated lemon rind
1 tsp. salt
1/4 tsp. pepper

Saute celery and onions in butter. Add rice, lemon rind and seasonings. Toss. Cook over low heat about 2 minutes.
