OATMEAL RAISIN MUFFINS 
1 c. flour
3 tsp. baking powder
1/4 c. shortening
1 c. quick-cooking oats
1 egg
1 c. milk
1/2 c. brown sugar
1/2 c. raisins
1/2 c. nuts (optional)
1/2 tsp. cinnamon
1/4 tsp. ginger

Mix the shortening into the flour, ginger and cinnamon; then add the oats. Mix the eggs, milk, brown sugar, nuts, and raisins in a separate bowl. Add this to the dry mixture. Fill muffin cups (paper) 3/4 full and bake 15 minutes at 375 degrees. Makes 1 to 1 1/2 dozen.
