OKRA & TOMATOES 
1 1/2 pts. 3" to 4" okra
3 tbsp. butter or bacon drippings
2 med. onions, sliced
3 med. tomatoes
Salt & pepper to taste

Put drippings in skillet. Add sliced onions. Slice okra 1/4" thick directly into skillet on top of onions. Cover and simmer until onion is soft (about 5 minutes). Slide okra and onion to one side of skillet (to preserve green color of okra). Place sliced tomatoes in other half of skillet and continue to simmer, covered until okra is tender. Then gently fold tomatoes and okra together. Simmering time approximately 15 minutes. 5 servings.
