OKRA AND TOMATOES 
1 lb. okra
2 onions, chopped
2 cloves garlic
1 bunch parsley, chopped
1 tbsp. chopped mint
1/2 c. olive oil
2 c. tomatoes
Salt and pepper

Soak okra in 1/4 cup vinegar for a few minutes. Drain for 1/2 hour. Brown okra in oil; add garlic, parsley, mint and onions. Add tomatoes, salt, and pepper to taste and simmer for 1 hour. Stir with care, because okra mashed easily.
