OKRA AND TOMATOES | |
1 lb. okra 3 slices bacon, chopped 1 lg. onion, chopped 1 med. size green pepper, finely chopped 1 (16 oz.) can tomatoes, chopped 1/4 tsp. salt 1/4 tsp. pepper Wash okra well; drain. Cut off tip and stem ends; cut okra into 1/2 inch slices; set aside. Fry bacon until crisp; drain on paper towels, reserving 2 tablespoons drippings. Cook okra in drippings 5 minutes or until lightly browned. Add onion and green pepper; cook, stirring occasionally until tender. Stir in tomatoes, salt and pepper. Cover and simmer 20 minutes. Stir in bacon, and heat thoroughly. Yield: 6 to 8 servings. |
