OKRA IN MEAT AND TOMATO SAUCE
BEMI BI LAHAM
 
1 lb. lamb meat, cut in chunks
1 lb. okra
8 sm. onions, peeled
4 cloves garlic
1/3 c. oil
1 1/2 c. fresh tomatoes or 1/2 c. tomato sauce
1 tsp. salt
1 c. water
1/2 tsp. allspice
1/2 tsp. black pepper
1 tsp. kisibra coriander, ground
1 tbsp. butter
1 clove mashed garlic
2 tbsp. lemon juice
1/3 c. oil

Put lamb meat in pot with water to cover. Boil and then reduce to simmer. Add tomatoes. Simmer for 10 minutes. Fry okra in oil with garlic. Remove and reserve. Saute onion in oil. Then add okra and onions to meat and tomatoes. Add spices and simmer about 7 minutes. Fry kisibra in butter with 1 clove mashed garlic. Pour on top of okra and add lemon juice. Stir very carefully so as not to break okra. Serve over rice.
