LATKES 
4 lg. potatoes or 2 c. grated raw potatoes
2 eggs
1 1/2 tsp. salt
1 tbsp. flour, bread crumbs or matzo meal
1/8 tsp. baking powder
Dash pepper

Peel large potatoes and soak several hours in cold water. Grate and drain well. Beat eggs well; mix with rest of ingredients including potatoes. Drop by spoonfuls onto well greased skillet, forming small cakes. Serve with applesauce or sour cream.
