POTATO LATKES 
5 lg. potatoes
2 eggs
2 tbsp. flour
1 tsp. baking powder
1 tsp. salt
1 sm. grated onion
Shortening for frying

Peel the potatoes; grate them on a fine grater and drain off most of the liquid. Beat the eggs and add them to the potatoes. Add the dry ingredients and the onion, if desired, and mix the batter well. Melt the shortening in a skillet and drop the batter by tablespoon into the hot fat. Fry the latkes on both sides until they are brown. Serve them hot with applesauce. Serves 8.
