THREE - VEGETABLE LATKES 
3 eggs
2 1/2 c. shredded zucchini (2 med.)
1 c. shredded, peeled potatoes (2 med.)
1 c. shredded carrots (2 med.)
1/2 c. onion, shredded (1 lg.)
1/4 to 1/2 c. parsley
1/2 tsp. salt
1/8 tsp. pepper
3/4 c. matzoh meal
Vegetable oil for frying

In a bowl combine eggs, shredded vegetables, parsley, salt, and pepper. Stir in matzoh meal. Shape into flat cakes, using 1 to 2 tablespoons mixture for each. Fry in 1 to 2 tablespoons of hot oil until brown. Drain on paper toweling. Makes 24 to 35 latkes.
