FRENCH COCONUT PIE 
3 eggs
1 1/2 c. sugar
1/2 c. butter, melted
1 tsp. vanilla
1 c. coconut
1 c. diced walnuts
1 (9 inch) unbaked pie shell

Beat eggs and sugar in medium bowl until smooth. Add butter and vanilla; blend well. Stir in coconut and walnuts. Turn into pie shell. Bake 10 minutes. Reduce oven temperature to 350 degrees and continue baking until filling is set and top is browned, approximately 35 minutes.
