DELICIOUS CHEESY BEAN DIP | |
1 (20 oz.) can refried pinto beans (I use La Costena) 1 (20 oz.) can refried black beans* 1 (24 oz.) jar salsa (I use Herdez brand Salsa Casera) 8 oz. shredded cheese (I use Kraft Mexican-style "fiesta" cheese but Cheddar-Jack works well too) 3 (4 oz. ea.) cans diced green chiles, drained (optional) Note: Refried black beans can sometimes be difficult to find. If you can't find them, you can substitute another can of refried pinto beans in their place. Place all ingredients in pot on medium high-heat and heat while stirring constantly. Continue to heat and stir until the everything melts into one big mass of thick, cheesy goodness (about 10 minutes). Eat with tortillas, tortilla chips or tostadas. Alternatively, you can also make a delicious succotash by adding frozen corn, instead. It's also very good over rice, particularly Spanish rice. Submitted by: M. Ryan |
