ITALIAN CREAM CAKE 
1/2 c. Crisco
2 c. sugar
1 tsp. vanilla butternut flavoring
1 tsp. baking soda
1/2 tsp. salt
2 c. flour
1 c. buttermilk
2 c. coconut
1 c. nuts
5 eggs separated
1/2 c. maraschino cherries, chopped

Cream shortening and sugar. Add egg yolks one at a time, cream well. Add buttermilk slowly; add dry ingredients. Add coconut, cherries and nuts. Fold in stiffly beaten egg whites. Bake in 3 layers at 350 degrees 40 minutes.

ICING:

1 stick butter
8 oz. cream cheese
1 c. nuts
1 box powdered sugar
1 tsp. vanilla butternut flavoring
1 c. coconut
1/2 c. maraschino cherries

Mix and spread on cake. Keep in refrigerator.
