ZUCCHINI CASSEROLE 
6 c. zucchini, peeled & diced
1 c. shredded carrots
1 onion, diced

Parboil until al denti; drain well and place in 9 x 12 inch baking dish. (Use microwave to precook if available.) Melt 1/4 cup of butter and pour over vegetables. Sprinkle with garlic if desired.

TOPPING:

1 c. sour cream
1 c. cream of chicken soup
1 spice pkg. sm. box chicken Stove Top dressing

Mix topping ingredients together and set aside. Sprinkle croutons of Stove Top dressing over vegetables reserving some croutons for top. Pour cream mixture over all. Top with reserved croutons. Bake in 350 degree oven for 35-45 minutes.

Since microwave ovens vary in power, you may need to adjust your cooking time.
