ZUCCHINI FLAN 
3 eggs
1/4 tsp. ground nutmeg
Salt and freshly ground pepper to taste
1/2 c. grated natural Swiss or Cheddar cheese
2 tbsp. butter
3 tbsp. chopped onion
1 tbsp. finely chopped scallions
6 sm. firm zucchini, stemmed, sliced
1 c. heavy cream

Melt butter in saucepan. Add onion and scallions and saute 4-5 minutes. Add zucchini; saute 5 minutes, turning over frequently. spoon into greased shallow oven casserole.

Beat together cream, eggs, nutmeg, salt and pepper to taste and pour over zucchini. Bake in a preheated 350 degree oven for 20 minutes, covered. Uncover, sprinkle with cheese and bake 15-20 minutes more or until set. Let cool 10 minutes before serving. Serves 6-8.
