CHEDDAR CHOWDER 
2 c. boiling water
2 c. chopped potatoes
1/2 c.diced carrots
1/2 c. diced celery
1 tsp. salt
1/4 tsp. pepper
1/4 c. flour
1/4 c. butter
2 c. milk
2 c. diced cheese
1 c. diced ham or bacon

Combine water, vegetables and seasonings in saucepan. Cover and simmer 10 minutes. Do not drain. Make white sauce with butter, flour and milk. Add cheese stir until melted. Add meat and undrained vegetables. Do not boil.
