ANNIE LOUISE'S CANDIED FRUIT
CAKE
 
3 pkgs. pitted dates
2 lbs. candied cherries
2 lbs. candied pineapple
8 c. pecans
2 c. sifted flour
2 tsp. baking powder
1/2 tsp. salt
4 eggs
1 c. sugar

Cut dates and pineapple into coarse pieces. Mix with whole cherries. Sift together flour, baking powder and salt. Mix with fruit. Beat eggs and gradually beat in sugar. Combine with fruit mixture, then add pecans. Pack into 2 (9") spring form tube pans which have been lined with waxed paper. Bake in oven, 275 degrees, for 1 hour and 15 minutes or until done.
