OATMEAL - RAISIN MUFFINS 
1 c. quick cooking oatmeal
1/2 c. raisins
3/4 c. milk
1/2 c. cooking oil
1/3 c. brown sugar, packed
1 egg, beaten
1 c. sifted flour
3 tsp. baking powder
1 tsp. salt
1/2 tsp. ground cinnamon
1/4 tsp. ground nutmeg
6 tbsp. flour
3 tbsp. brown sugar, packed
1 1/2 tsp. ground cinnamon
3 tbsp. butter or reg. butter

Oven 20 minutes baking time for 12 muffins. Combine oatmeal, raisins, milk, oil, 1/3 cup brown sugar and egg in mixing bowl; mix to blend. Sift together 1 cup flour, baking powder, salt, 1/2 teaspoon cinnamon and nutmeg. Add dry ingredients to oatmeal mixture, stirring just until moistened spoon batter into greased 3 inch muffin pan cups, filling 2/3 full.

Combine 6 tablespoons flour 3 tablespoons brown sugar and 1 1/3 teaspoons cinnamon in small bowl. Cut in butter with pastry blender or a fork until crumbs form. Sprinkle crumb mixture over each muffin. Bake in 400 degree oven 20 minutes or until a toothpick inserted in center of muffin comes out clean. Remove from oven. Let stand 2 minutes on cooling rack before removing muffins from pan. Serve hot.
