OATMEAL RAISIN MUFFINS | |
1 (8 oz.) can crushed pineapple 1 c. dairy sour cream 1 egg 1/4 c. butter, melted 1 1/2 c. all-purpose flour 1 c. old-fashioned oats 1/2 c. sugar 1 tbsp. baking powder 1 tsp. ground cinnamon 1/2 tsp. ground nutmeg 1/2 tsp. salt 1 c. raisins In small bowl, combine undrained pineapple, sour cream, egg and butter until blended. In large bowl, combine remaining ingredients; make well in center. Pour in pineapple mixture. Stir until just mixed. Spoon into greased 2 1/2 inch muffin cups. Can use paper liners, if you like. Bake in 350 degree oven for 30 to 35 minutes until lightly browned and wooden pick inserted in center comes out clean. Serve warm. |
