BISHOP'S BREAD 
2 1/2 c. flour
1 tsp. cinnamon
1 tsp. baking powder
1 tsp. salt
1/2 c. shortening
2 c. brown sugar
3/4 c. sour milk
1 egg
1/2 tsp. baking soda

Mix flour, sugar, salt and shortening. Save 3/4 cup of mixture for top crumbs. To the remainder add baking powder, soda, cinnamon, egg and sour milk.

Beat briskly until batter is smooth. Pour into an oiled pan and scatter crumbs of original mixture on top. Bake about 1 hour and 25 minutes at 375 degrees in a loaf pan.

My grandmother used to make this all the time around Easter. She always made it in pie plates, never have tried in a loaf pan. If you use pie plates cut the bake time to 30-35 minutes. Our family loves this recipe!
