BANANA MUFFINS 
1 c. sifted all-purpose flour
1 c. whole wheat flour
2 tsp. baking powder
1 tsp. salt
1/3 c. sugar (optional)
1 egg
1/2 c. milk
1/4 c. salad oil or melted shortening
1 tsp. grated fresh lemon peel
1 c. mashed ripe banana (about 3 medium bananas)

Sift together flour, baking powder, salt, and sugar. Beat the egg and mix with the milk, oil, and lemon peel, then add this to the dry mixture. Add mashed banana and stir only until dry ingredients are moistened and batter is still lumpy. Spoon into 12 greased muffin cups. Bake in 425 degree oven for 20 to 25 minutes. Serve hot.
