BANANA DATE MUFFINS 
1 1/2 c. whole wheat pastry flour
1/2 c. bran
1/2 c. granulated fructose
1/2 c. chopped dates
1/2 c. peeled & shredded apple
1 tbsp. baking powder
3 lg. ripe bananas, mashed (approximately 1 1/2 c.)
2 egg whites
1/2 c. skim milk

1. Preheat oven to 350 degrees. Spray muffin pan with Pam.

2. Mix all ingredients except skim milk and egg whites in a large bowl.

3. Lightly beat egg whites. Gradually add skim milk while beating eggs.

4. Add to the rest of the ingredients. Blend well.

5. Fill muffin tins 2/3 full.

6. Bake for 20-30 minutes.
