BANANA MUFFINS 
3 tbsp. vegetable oil
1 egg
1/4 c. skim milk
1 1/3 c. mashed very ripe bananas (about 3)
1 c. whole wheat flour
2 tsp. baking powder
1/4 tsp. baking soda
1/8 tsp. salt

Preheat oven to 400 degrees. Spray 12 muffin tins or 3 miniature tins with vegetable spray or grease lightly. Beat egg, oil and milk; stir in bananas. Mix dry ingredients together and stir into banana mixture until flour is moistened.

Fill tins 1/2 to 2/3 full. Bake about 23 minutes (15-18 for small one). Let cool about 15 minutes before removing from pans.
