BANANA MUFFINS 
2 c. unsifted flour
1/2 c. sugar
2 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
1/4 tsp. nutmeg or cinnamon
1 1/2 med. banana, mashed
1 egg
1/2 c. milk
1/3 c. oil
2 tsp. wheat germ
2 tbsp. dry milk powder

Preheat oven to 375 degrees. In mixing bowl, combine flour, sugar, baking powder, baking soda, salt, and nutmeg. Make well in center. Combine remaining ingredients; add all at once, mixing only until dry ingredients are moistened. Spoon into greased muffin cups, filling 2/3 full. Bake 15 to 20 minutes or until golden brown.

Makes 10-12 muffins.
