ITALIAN BAKED CHICKEN 
Wash and pat dry one frying chicken, cut up. Rub a small amount of oil on the skin. Place in foil-line roasting pan. Season as desired with the following spices:

Pepper
Garlic powder
Onion powder
Parsley
Basil
Oregano
Paprika
Rosemary Bay leaf

Bake, covered at 325 degrees for 1 hour. Uncover to crisp and brown skin and continue baking for an additional 45 minutes, checking the chicken for brown- ness. Cover with a loose foil tent to prevent over-browning and bake until fork tender.
