CLYDE'S OWN BAKED ITALIAN
CHICKEN
 
1 1/2 lbs. fillet chicken breast
1 sm. can sliced mushrooms
1 (28 oz.) jar Ragu Italian sauce with herbs, or its equivalent
1 (8 oz.) bag Mozzarella cheese, shredded
Salt & pepper to taste
Sprinkle of oregano (1/8 - 1/4 tsp.)

Tenderize chicken. Spray baking dish with Pam. Place tenderized chicken on bottom of dish. Add salt and pepper and a bit of oregano. Drain mushrooms and spread over chicken. Add generous amount of the sauce over mushrooms. Add rest of oregano. Bake at 350 degrees for 20 to 25 minutes or until bubbly. Remove from oven. Spread cheese over sauce. Return to oven until cheese melts and spreads. Serves 4.
