ZUCCHINI SAUSAGE CASSEROLE 
1 onion
2 green peppers
1 lb. Italian sausage
4 heaping cups zucchini
1 c. Bisquick
1/2 c. oil
1/2 c. shredded Cheddar cheese
Salt and pepper to taste

Saute onion, peppers, and sausage. Mix together zucchini, Bisquick, oil, shredded cheese and 4 beaten eggs. Be sure Bisquick is mixed well. Add sausage mixture to greased 9 x 13 inch pan. Bake 30 minutes at 350 degrees.
