ZUCCHINI SAUSAGE CASSEROLE 
1/2 lb. Italian sausage, browned & drained
1 c. cottage cheese
2 tbsp. flour
1/4 c. Parmesan cheese
3 c. sliced zucchini
1 egg
3/4 c. mushrooms, sliced
1/2 c. grated cheddar or Colby cheese

Toss sausage with 1 tablespoon flour and place in greased 1 1/2 quart casserole. Saute zucchini and mushrooms in skillet until tender. Toss with remaining flour. Spoon 1/2 the mixture over meat. In medium bowl, blend cottage cheese and Parmesan with egg. Pour over zucchini layer; top with remaining zucchini and grated cheese. Bake at 350 degrees for 15 to 20 minutes or heated through.
