ZUCCHINI SAUSAGE CASSEROLE 
2 lb. zucchini
1/2 lb. bulk sausage
1/4 c. onion, chopped
1/2 c. fine cracker crumbs
2 eggs, slightly beaten
1/2 c. Parmesan cheese, grated
pinch thyme and rosemary

Cook zucchini 15 to 20 minutes. Drain and chop coarsely. Brown meat. Add zucchini to sausage and onion. Add remaining ingredients. Mix well. Put in greased casserole dish. Bake 45 minutes at 350°F.

Serves 6.
