SAUSAGE AND ZUCCHINI CASSEROLE | |
1 lb. Italian sausage, browned & fat drained 3-4 sm. zucchini, sliced thin 1 1/4 c. buttermilk baking mix 2 c. spaghetti sauce 1 c. sm. curd cottage cheese 1 lg. egg 1/2 c. grated Parmesan cheese In a casserole dish, layer the sausage, zucchini, 1/4 cup of baking mix and 1/2 of spaghetti sauce. Mix 1 cup baking mix, cottage cheese and egg until mixture forms soft dough. Spread on top. Bake at 350 degrees for 30 minutes. Serve with remaining sauce and Parmesan cheese. |
