JAMES SMITHS FAVORITE APPLE AMBER | |
Serves 4. 1 lb. apples, preferable Kippins, peeled and cored 1 tbsp. of water 2 oz. granulated sugar Grated rind and juice of 1/2 lemon Slice the apples into a pan and the water and sugar. Cover and cook gently to a pulp, stirring occasionally, then beat until smooth. Beat in the egg yolks, lemon rind and juice and pour into a 1 pint ovenproof dish. MERINGUE: 2 egg whites 4 oz. sugar Whisk the egg whites until stiff. Whisk in 2 tablespoons of the sugar, then fold in the remainder. Pile on top of the apple mixture. Bake in a preheated moderate oven 160 degrees C. (325 degrees F.). Gas Mark 3, for 20 to 30 minutes until golden. Serve hot or cold. |
