ST. JAMES COFFEE CAKE 
3 c. flour
2 c. sugar
1/2 tsp. cinnamon
1/2 tsp. cloves
1/2 tsp. nutmeg
3/4 c. shortening
2 c. buttermilk (or 2 c. milk and 2 tbsp. vinegar)
1 tsp. baking soda
1 c. seedless raisins, optional
1 c. walnuts, chopped

Combine together flour, sugar, cinnamon, cloves, nutmeg and shortening until mixture resembles cornmeal. Reserve 1/2 cup of dry mixture.

Combine buttermilk and baking soda and add to dry mixture. Stir in seedless raisins and walnuts.

Pour in 13x9x2 inch baking pan which has been greased and floured. Sprinkle reserved 1/2 cup dry mixture evenly over top. Bake at 350 degrees for 30 minutes or until done.
