BARBECUED BEEF 
Vegetable cooking spray
1 lean boneless rump roast (4 lb.)
3/4 c. reduced-calorie ketchup
1/4 c. red wine vinegar
1/4 c. salt-free tomato juice
1 tbsp. mustard
2 tsp. brown sugar
1/4 tsp. pepper
2 bay leaves
1 tsp. liquid smoke
1 tsp. Worcestershire
Sandwich buns

Spray cooking spray in large Dutch oven; place over medium heat until hot. Cook trimmed roast on all sides until browned. Remove from pan; set aside. Wipe pan with paper towel. Combine ketchup with next 8 ingredients; stir well. Return roast to pan. Pour ketchup mixture over roast; bring to boil.

Cover and reduce heat; simmer 3 hours until roast is tender. Discard bay leaves. Remove meat from pan; shred with 2 forks. Return to pan; cook over medium heat until thoroughly heated. Serve on buns. Serves 10-12.
