CHICKEN SCAMPI 
1/2 stick butter
2-3 pieces boned chicken, or approx. 1/2-1 lb. boned chicken breast
1 1/2 tsp. minced fresh garlic or 1/4 tsp. dry garlic
3 tbsp. chopped parsley
1/4 tsp. paprika
1/4 c. chopped onion
1/4 c. wine, your choice
1/4 c. lemon juice
Salt & coarse ground black pepper to taste

2 quart casserole. Microwave butter for 1/2 to 1 minute until melted. Add meat, garlic, parsley, paprika, onion, wine, lemon juice, salt and pepper. Cover and microwave on high for 5 minutes. Stir if needed and microwave at 50 percent for 4 or 5 minutes. Let stand 5 minutes. Serve with rice or noodles.

Since microwave ovens vary in power, you may need to adjust your cooking time.
