PEACH MUFFINS | |
1/2 c. butter 3/4 c. granulated sugar 1 egg 1 1/2 c. flour 1 1/2 tsp. baking powder 1 tsp. vanilla 1/2 c. plain yogurt or dairy sour cream 1 c. chopped fresh or canned peaches, well drained 1 c. chopped pecans Cream butter, add sugar; mix well. Add egg and beat well. Beat vanilla and yeast into mixture, stir in flour and baking powder. Chop peaches into small pieces. Fold peaches and pecans into mixture. Drop by spoonfuls into well greased muffin tins. Bake at 400 degrees for 20 minutes or until nicely browned. Yield: 12 muffins. |
