PEACH MUFFINS 
1/2 c. butter
3/4 c. granulated sugar
1 egg, room temp.
1 1/2 c. all-purpose flour
1 1/2 tsp. baking powder
1 tsp. vanilla
1/2 c. plain yogurt or dairy sour cream
1 c. chopped fresh, frozen or canned peaches, well drained
1 c. chopped pecans

Cream butter; add sugar, beating until mixture is light colored and fluffy. Add egg; beat well. Sift together flour and baking powder; set aside.

Beat vanilla and yogurt into creamed mixture, stir in flour mixture. Chop peaches into small pieces, about 1/4 inch thickness. Add fruit and pecans; stir briefly, just to blend.

Drop by spoonfuls into well greased muffin tins. Bake at 400 degrees for 20 minutes or until nicely browned. Yield: 12 muffins.
