PEACH POPPY SEED MUFFIN 
2/3 c. pureed peaches
1 tsp. baking soda
10 tbsp. butter (softened)
1 c. sugar
2 eggs
1 1/4 c. flour
1/4 tsp. salt
1/2 tsp. vanilla
3 tbsp. poppy seeds

Stir baking soda into peaches (be prepared for mixture to foam). Cream butter and sugar until mixture is smooth. Add eggs one at a time alternately add flour and peach puree. Stir in salt, vanilla and poppy seeds.

Fill greased muffin cups nearly to the top. Bake at 350 degrees for 20 to 25 minutes until brown. Use toothpick for doneness.
