POPPY SEED CAKE - MUFFINS 
2 1/4 c. sugar or less
3 eggs
1 1/8 c. salad oil
3 c. flour
1 1/2 tsp. salt
1 1/2 tsp. baking powder
1 1/2 tsp. vanilla
3 tsp. poppy seeds
1 1/2 tsp. almond flavoring
1 1/2 tsp. butter flavoring (optional)
1 1/2 c. milk

Cream together sugar, eggs and oil. Add flour, salt and baking powder alternately with milk. Add vanilla, poppy seeds and flavorings. Beat 1-2 minutes. Bake at 350 degrees for 40-45 minutes as cake and 10-15 minutes as muffins.
