BANANA COFFEE CAKE MUFFINS 
2 1/2 c. unsifted flour
1 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
1 tbsp. instant coffee granules
1 egg
1 c. semi-sweet chocolate chips
1 tbsp. water (hot)
1 1/3 c. mashed fully ripe bananas (3 lg.)
2 sticks butter
1 1/4 c. sugar

Stir together flour, baking powder, baking soda and salt in small bowl. Reserve. Dissolve instant coffee in hot water. Stir in mashed bananas. Reserve.

Beat together butter and sugar in large bowl until light and fluffy. Beat in egg. Mix in bananas. Stir in flour; mix until well blended. Fold in chocolate pieces. Divide batter evenly into greased muffin cups. Bake at 375 degrees for 20-30 minutes until done. Cool on wire racks.
